Lecce, Italy Terronia Wine School of Southern Italy held at Awaitingtable Cooking School, Lecce Puglia.
The course will be conducted by Silvestro Silvestori founder and director of the Awaiting Table Cooking School.
Silvestro has been running the Awaitingtable Cooking School for several years. He is passionate bout the wine and food of Southern Italy in general as well as in Puglia in particular. He is a qualified sommelier and runs a very successful cooking school. He has excellent language skills to ensure that nothing is "lost in translation".
Terronia is a week long residential school held in the Castle on the outskirts of Lecce in the Puglia region of Italy. Lecce can be reached by train from Rome, or you can fly to Brindisi. transport from Lecce to the course venue can be arranged on registration.
The class will deal with wines from dozens of varieties from Italy's rich south where the industry is rapidly modernizing with an emphasis on indigenous varieties. Some of the varieties you will be trying include negroamaro, aglianico, primitivo, cinsault and nero d’avola which you may have heard of but there will also be bianco d'allessano, verdeca, susumaniello, ciro, falanghina, bombino bianco, grillo and many others which you will know less about. You will learn about the wines in the context of the Regional Cuisine of Puglia.
Each day of the course will consist of structured tasting and discussion of some local wines followed by a meal where the wine and food matching of the wines will be more fully explored. Visits to wineries and from winemakers will increase the value of the course. Several meals will be prepared communally to help participants fully appreciate the context of the wines. Participants will be given a certificate of achievement on completion of the course.
This course is a great opportunity for winemakers, sommeliers, restauranteurs, wine marketers, writers and winelovers to experience these wines in their native environment. It is suitable as an activity based holiday, or it can also be used to round out the experience of those interested in deepening their knowledge of the Wines and food of southern Italy
